Abstract

It is an exploratory research on food culture of the population of the municipalities of Ampere and Santa Izabel West. In order to identify the power of references of the population above as it stands today. Data collection was conducted through interviews with people who had in their daily closeness to the food issues. The organization of the interviews was based on content analysis and then analyzed by the technique of collective subject discourse. The results emphasize the knowledge of the respondents in relation to the local food culture. The changes caused by globalization and changes that ended up happening, modified food preferences in the population living in these municipalities.
