Abstract

This work aimed to analyzes the flour wheat’s quality control, through reports issued located at a pasta industry from West of Paraná State in Brazil. This study is very important to create an integrated and shared quality management system, according Brazilian legislation refered to starches, flours and wheat middlings, related alimentary security. It was used as parameter the counting of Bacillus cereus in wheat flour, and technical skill. It was evaluated the capacity to detect variations and to analyze the results of Bacillus cereus counting, applying statistical analysis.
